I just used some food service wrap to make a shoddy blanket for the sous vide setup. The water does evaporate over the hours, and this will prevent it from getting too low overnight, which can shut off the Immersion Circulator.

In the morning, I'll season and start the white meat. Now I just need to whip up a batch of caramel pecan rolls for the morning, and grab some sleep,
